Five microwavable meals in a mug

Looking to make delicious meals on a budget? Too lazy to find a plate? Here are five meals you can make in your microwavable mug.

Breakfast: Quiche
This recipe is perfect for a quick morning meal on-the-go in a mug but can be made more elaborate for sit-down breakfasts as well.

Ingredients:
1 egg
1 1/2 tablespoons milk
Salt
Black pepper
1/4 of a bagel (or similar amount of any type of bread, depending on your preference)
2 teaspoons cream cheese (if you’re looking for a healthier option, try substituting with pureed cottage cheese or plain yogurt strained overnight)
1/2 slice prosciutto or ham (or try spinach, mushrooms or any other vegetable/meat you’d like in your quiche!)

Optional Ingredients:
Fresh thyme leaves or fresh chopped chives
Dijon mustard
Cheese

1. Beat egg and milk together with a fork in a coffee cup, adding salt and pepper to taste
2.Tear bread into dime-size pieces; stir in.
3.Add cream cheese; stir in.
4.Tear or cut prosciutto into small pieces; add to mixture.
OPTIONAL: Sprinkle with thyme/chives; Add cheese.
5. Microwave on high until done, about 1 minute 10 seconds.
OPTIONAL: Garnish with mustard and fresh thyme or chives to taste.

Snack: Chilaquiles
This recipe can really be tailored to your own preferences (or what you have available in your fridge at the moment) to make the perfect Mexican snack, either in a small mug for yourself or larger quantities to share with friends.

Ingredients:
1 egg
1 tablespoon milk
Salt
Black pepper
5 large tortilla chips
Beef and/or beans
Corn
1 tablespoon salsa (if you’re looking for a healthier option, try chopping some tomatoes and perhaps adding onions/jalapenos/cilantro/lemon juice to make your own pico de gallo)
Queso fresco

Optional Ingredients:
Sour cream (if you’re looking for a healthier option, try substituting with greek yogurt!)
1 tablespoon sharp cheddar cheese
Chopped green onion

1. Break 4 or 5 tortilla chips into small pieces to fit in the cup.
2. Beat egg and milk with a fork in a coffee cup, adding salt and pepper to taste.
3. Add roughly a spoonful of beef and/or beans and corn; stir to coat.
4. Add queso.
5. Microwave on high until done, about 1 minute, 20 seconds.
6.Add salsa
OPTIONAL: Garnish with remaining tortilla chips, sour cream, cheese and green onion to taste.

Meal: Mac and Cheese
This recipe allows you to enjoy a classic comfort food without the guilt of processed easy Mac cups.

Ingredients:
1/3 cup pasta
1/2 cup water
1/4 cup milk
1/2 cup shredded cheddar cheese

OPTIONAL:
Cooked veggies (mushrooms, spinach, etc).
Cooked meat (ham, sausage, etc).

1. Combine the pasta and water in a mug.
2. Microwave on high for about two minutes, then stir.
3. Repeat this for at least 2 to 4 more minutes, stirring at each 2-minute interval, until the water is absorbed completely.
4. Stir in the milk and cheese.
OPTIONAL: Add in some veggies or meat to add extra flavor and perhaps make this meal a little more healthy!
5. Microwave for about another minute.
Side: Mashed Potatoes
This recipe adds a homemade touch to a meal without too much fuss or effort.

Ingredients:
1 or 2 medium potatoes
Milk
Butter
Salt
Black Pepper

Optional Ingredients:
Bacon bits

1. Wash and peel (optional) potatoes and put in mug
2. Cover mug with plastic wrap (poke a hole in top) or wet paper napkin and microwave on high until done, about 8 minutes
3. Mash potatoes with spoon or fork
4. Add milk and butter until you reach your desired consistency
OPTIONAL: Microwave for about 30 seconds or so, especially if consistency becomes too watery.
5. Add salt and pepper to taste
OPTIONAL: Add bacon bits to taste

Dessert: Chocolate S’mores Cake
This recipe might take a little longer than the others, but is the perfect serving size for a little indulgence.

Ingredients:
2-3 tablespoons graham cracker crumbs
3 1/2 tablespoons unsalted butter, melted (can be substituted with coconut butter)
2 tablespoons sugar
1 large egg
1/2 teaspoon vanilla extract
1/4 cup all purpose flour (for a healthier option, try whole wheat pastry flour)
2 tablespoons unsweetened cocoa powder
1/8 teaspoon baking powder
Salt
1 1/2 ounces milk chocolate (chopped or morsels)
Marshmallow fluff, cream or actual marshmallows

1. Mix 1/2 tablespoon melted butter with 2-3 tablespoons of graham cracker crumbs. Press into the bottom of your mug to form a crust
2. In a separate bowl, beat egg, sugar and vanilla. Add in flour, baking powder, salt and cocoa, stir until a thick batter forms. Pour batter into the mug.
3. Add 3 tablespoons melted butter and chocolate, mixing to combine.
4. Add a scoop of marshmallow fluff/cream or a few marshmallows. (WARNING: Be careful not to put in too much – marshmallows expand when heated!)
5.Microwave on high until done, about 1 minute and 20 seconds to almost 2 minutes.
OPTIONAL: Remove and top with additional marshmallows, putting it back in the microwave for 5-10 seconds to melt them. Add graham crumbs on top.
